Baking Betty Crocker

So it has begun!

I have gluten free all purpose flour.  I'm not the biggest fan of it I won't lie, BUT it's a good substitution because everything in the world has gluten in it even some lunch meats - I don't even know how that happens!

So here is our first recipe Strawberry Shortcake Cupcakes.

I skipped the icing it looked complicated and I call them muffins - the kids don't know the difference anyway!  So far they are a hit - yay for muffins!

  1. Annie- My son was diagnosed with ADHD and Aspergers in Jan of this year. So we too have been gluten free for a little bit. ITs not really that hard. Surprising there are a lot of products out there that are already gluten free. The butter we've been using for years just happens to be gluten free. Chips like doritos and lays are gluten free. I know that the mistake I made when we started was going to a major chain grocery store and going to the "gluten free" section. This works, but is way more expsenive and its harder to get the kids to understand the change when all the products look different. The best thing I did was purchase a book called "gluten free grocery shopping guide" I ordered my from amazon.com. The hard part in our house isn't the gluten. My son also has intolerance to: eggs,yeast,almonds, sunflower, cashews, peanuts, halibut, pork,and honeydew. Some of these don't bother us (halibut) don't think he has ever eaten that. But the eggs and the sunflower oil and yeast make meals very hard. I had just mastered bread in my bread maker that is gluten free. He loved it, had it only once then we found out all the other senitivites. Luckily he can have dairy. Dairy usually effects kids with a brain imbalance very much. We are very lucky. I just don't know what I'd do if he couldn't have milk. Just last night we were having tacos, his idea. I used my book to find everything gluten free. As I was getting ready to put the taco mix on our hamburger I just happened to read the label. Sure enough it had yeast in the taco mix. I was so upset. So I had to keep his hamburger plain. He is very good about the change. I think he has had so many years of stomach problems he is willing to try anything.

    There is a book out there that every mother with a child that has a brain imbalance (ADHD, Aspergers, autism)should read. ITs called Disconected Kids.

    My son is 10 and in the 4th grade. My husband and I have known there has been a problem since 1st grade, but everyone; doctors, family counslers, teachers at school, counslers at school, kept telling us he is just a different learner he is a great kid, but just needs a little more stricker rules. Well we didn't believe that. Just this Jan my husband saw a commercial for a place called Brain Balance. ITs been a gift to us. They tested my son and that is when we found out his imbalance. He is neurologically at the age of 6. So my son is 4years behind. Talk about a kick in the stomach as a mother. To sit there and hear I was right all along there has been an issue and he is only getting more behind. My son functions very well in class. He squeezes by. He is well enough behaved in class and CAN get his work done well enough that most school employees don't see him as needing help. My son would have continued to "just get by" his whole school years. Like I said Brian Balance was a gift to us because we've only been there a month and we already see a different child. Even his teacher at school said he will join in on group projects, where as before he would just sit in the group but not help unless asked by her. I wish you well in your findings with your son.   2. Have you tried the Pamela's Baking mix? I keep it on hand for friends who are gluten free and it's pretty decent.
